Wolfram Demonstrations Project offers a collection of more than 5,000 interactive visualizations for a wide variety of mathematical topics.

FooPlot is an online graphing calculator that allows you to plot up to five equations (function, polar, or parametric) simultaneously, then save your graph as an image file.

Sitmo The interactive LaTex equation editor let's you write and download equations in seconds! An excellent resource for publishing math equations on the web.

Interactivate offers a collection of more than 100 interactive activities and tools spanning many areas of mathematics.  The graphing tools are particularly useful.
